Peanut Butter Chocolate Chip Heath Bar Cookies


As I said before, I love to bake. I went to visit my parents over the long weekend and at about 10pm on Sunday night, my mom and I decided to bake something. We tried to gather the ingredients for multiple desserts, but we were missing too many things and it was too late to go to the grocery store. We finally found a bag of Heath Bar Toffee Bits in the pantry, so we decided to build a cookie recipe around these. We ended up with Peanut Butter Chocolate Chip Heath Bar Cookies and they were delicious! I think I ate about half the batch myself. It's a good thing my mom made me take both a weightlifting and spin class this morning to work off those extra calories! :) 

Ingredients
1/2 cup butter, softened
1/2 cup peanut butter (crunchy or creamy)
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/2 teaspoon vanilla
1 1/4 cups flour
3/4 cup Heath Bar Toffee Bits
3/4 cup chocolate chips


Beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add the sugar and brown sugar. Beat until combined, scraping sides of bowl. 


Add the egg and vanilla and beat until combined.


Slowly beat in the baking soda, salt, and flour.


Add the toffee bits and the chocolate chips and mix briefly. (My mother and I could not find any chocolate chips, so we used a chocolate bar that we broke into small pieces).


If necessary, cover and chill the dough until easy to handle. 

Preheat the oven to 375 degrees. 

Shape dough into 1-inch balls. My mother had a 1-inch baller scoop that worked perfectly, but this level of accuracy is not necessary. :) Place balls 2 inches apart on an ungreased cookie sheet.


Either flatten cookies by making crisscross marks with the tines of a fork or press flat and add peanut halves in a decorative pattern.


Bake for 7 to 10 minutes or until bottoms are light brown. Transfer to wire rack and let cool.

Meet the Team...

I am Ms. Baseball. I currently live in the beautiful Pacific Northwest and have lived here all my life. I love my job as an Executive Assistant and can't think of another job I would rather have. I am lucky to be able to take some time off of work during the baseball season to visit my pitcher wherever he may be located. Beyond being a baseball fan, I also love to cook and bake, do crafts and sew, and my new found interest is extreme couponing. I am sure you will hear more about all of these in the future.

My pitcher was also born and raised in the Pacific Northwest. He was drafted back in 2007 out of college. In a regular office job such as mine, your location from day-to-day is stable and predictable. My pitcher's location, however, is not always as predictable. During spring training this year, my pitcher played for three different ball clubs. Within the past four years, he has been traded a couple of times, has played for multiple teams and has played at least one game at all of the Minor League levels. He is currently playing in AA, but could be moved anywhere at any time.

My pitcher and I met in our college town in Fall 2007. One of our first conversations was during Dad's Weekend when I walked over to him at a party and asked for his autograph on a baseball. I informed him that I would be selling this baseball at our sorority Dad's Weekend auction. My pitcher, being the funny and sarcastic man he is, joked that he would like us to auction him off for a date instead. The next day I sold this baseball at our auction with a few other insignificant collegiate apparel items for almost $300.

A few weeks after our first encounter, my pitcher finally asked to be my Facebook friend. After a few more weeks of both of us being shy, I sent him a Facebook message that mentioned I would like to hang out sometime. We exchanged phone numbers and planned to meet out at a bar with some friends later that week. The night we met at a bar, it took about an hour for either of us to get up enough courage to actually cross the room and talk to the other one. Once we started hanging out though, it was clear that we were perfect for one another and we've been together ever since. My pitcher later on told me that when I walked into the bar, his friend sitting next to him said, "Dude, forget about that girl you're meeting. The girl who just walked through the door is perfect for you!"

Play Ball!

I thought in my first post, I should provide a little bit of information about myself as a disclaimer of sorts for anyone who may want to read my blog. Please see below...
  1. I am very new to blogging. Honestly, until a few weeks ago, I had never actually read a blog. Within the past few weeks though, I have been sucked into the world of blogging by some fantastic individuals in my life. 
  2. I have not actually married my pitcher as of yet (hence the quotation marks around "wife" in the name of my blog). We have been together for almost three and a half years though, so "wife" is close enough for now. 
  3. I'm not sure where this blog is heading. I don't have one specific purpose, so as a warning, the topics may vary greatly from post to post.
  4. Finally, you should also probably know that I am an Executive Assistant who likes lists and may be a little OCD from time to time. :D
That all being said, I am ready to share my random thoughts on life with anyone who would like to hear about them. Read at your own risk and wish me luck. ;)
