Red Velvet Cake Bites!

These red velvet cake bites may just be my favorite thing ever! I got this idea from a catering company we order from at work all the time. Ever since the first time I made them, I have been craving them and love to make them any chance I get. Even my pitcher who does not express emotion or excitement over anything has made it very clear that he loves these cake bites! I will warn you that you may not be able to stop eating these once you start, so make at your own risk! ;)


Ingredients
1 Box Red Velvet Cake Mix
1/3 Cup Vegetable Oil
1-1/4 Cups Water
3 Large Eggs
2/3 Tub of Cream Cheese Frosting
1 Package Vanilla Almond Bark


Bake cake according to package instructions in a 9 x 13 pan. Let the cake cool and then cut into 6 large pieces.


Crumble the pieces with your hands into a medium size bowl.


Add the 2/3 of a tub of cream cheese frosting to the crumbled cake. Mix together with your hands until all of the white frosting is mixed in. This is one of my favorite parts! ;)


Once the cake and frosting are mixed together, start pulling off bits of the mixture and rolling these into 1-1/2 inch balls.


Refrigerate or freeze the balls for about 30 minutes, so they are firm and easy to work with.


Slowly melt the vanilla almond bark either on the stove or in the microwave. Make sure you stir frequently to ensure that you do not burn the almond bark!


Roll the chilled cake balls into the melted almond bark to fully coat. Either you can remove the coated cake balls with a spoon and place onto a plate for them to harden or at this point, you can also add a lollipop stick in order to make cake pops. To cool the cake pops while allowing them to remain round, I use a pasta strainer turned upside down and place the lollipop sticks in the strainer holes.


Let the cake bites or cake pops harden and enjoy!! :)

Oops...Happy Belated Birthday Mrs. Bee!!

Happy Wednesday Evening!

I would first like to apologize as recently I have had a very tough time sitting down to write on my blog. Apparently since I have turned old, my life has become a wild tornado. I feel like I have been going from one task to the next nonstop. :)

I was at bible study earlier this week and was talking with my best friend, Mrs. Bee, about blogging. She told me that I need to write something to get back in the swing of blogging. Since she told me to write about ANYTHING, I am going to dedicate this blog post to Mrs. Bee. I actually wrote a blog post back in July for her birthday, but I apparently didn't get around to ever posting it. This being said, I will share my belated birthday post now. Haha.

Some of you know Mrs. Bee personally. Any of you who do know her can attest to the fact that she is an absolutely wonderful person. In fact, Mrs. Bee is one of the most amazing people I have ever known. We have been best friends since the day I was born (as I was born one year after her).

We have that type of friendship where we don't have to see each other every day, every week, or even every month. We each have very busy lives and we definitely have had seasons in our lives where we were in completely opposite situations and places, so we just didn't talk very much. Even with these times, we have remained best friends and have always picked up our friendship right where we left off.

We always laugh that even if we don't see one another for months, when we finally get a chance to hang out, we will be wearing the same outfit or have the same haircut or same hair color. We are definitely sisters at heart.

Since we now live in the same area, I get to see her beautiful face every week. I enjoy her so much and love spending time with her. She is always so bright and lights up my life. I don't know what I would ever do without her.


I love you so much Mrs. Bee and I hope your birthday last month was wonderful! ;)

My 25th Birthday

I just celebrated my 25th birthday (ugh). This was kind of hard for me because I am now feeling a little old. I had such a fun birthday though. I am visiting my pitcher right now, so I got to spend most of the day with him and the rest of the day with the wives and girlfriends of the other players.

My pitcher took me to see the movie "Horrible Bosses" in the morning and then took me to the mall to do some shopping and to get some lunch before I had to drop him off at the field. After I dropped him off, the girls and I went to a flea market. I have to admit, I had never been to a flea market before. I had so much fun! I need to find some good flea markets around home. I fell in love with this adorable Pillsbury Dough Boy cookie jar, but I couldn't bring myself to buy it because I couldn't figure out how I would get it home. After much thought and after calling my wise mother, I went back the next morning and bought it though! :)

I tried to ship him home, but they wanted to charge me $28! That was more than I paid for him, so I moved some things around and somehow fit him into my carry-on bag. Hopefully he makes it home safe and sound!

After the flea market, I changed into my birthday shoes! I always wear these on my birthday! I feel like my birthday is the one day of the year that I can do whatever I want. This includes wearing hot pink heels to baseball games! ;)


Before heading to the game though, we went to grab drinks and appetizers. We found this adorable little cafe/bar downtown that had happy hour specials all night. We ordered delicious fondue that may or may not have had Velveeta cheese in it and some yummy drinks. I feel that birthdays are also days that you can indulge a little because calories don't count.

One of the girls was so sweet and bought me a cupcake from a shop next door. The girls felt that they all had to sing to me in the cafe which of course was mildly embarrassing. ;)

After the baseball game (where I even got to see my pitcher play!), we headed back downtown for dinner and more drinks. We decided to go back to the cute little bar/cafe since they had happy hour specials until close that night. I got to meet some of my pitcher's teammates who I hadn't met yet. Of course, they had to embarrass me some more by singing to me again.

I had a great time on my birthday and am so glad I got to spend the day doing fun things with people I enjoy. Let's hope 25 isn't as bad as it sounds! Here's to hoping this year will bring good things! ;)

Volcanoes Game

My pitcher finds it kind of odd, but I enjoy watching baseball and going to games. I have been to a ton of games in the past few years. Last weekend, I invited my parents to come for a visit and to go to a baseball game with me. This was a strange experience because I don't often go to baseball games where my pitcher is not involved. This was also weird because my pitcher played for this team a few years ago and I had never been to a game at this stadium before.

During the game, the Giants World Series Trophy was on display. Of course, my family and I stood in line to see the trophy and take pictures with it.


Don't get me wrong, the trophy was pretty awesome, but it was smaller and less significant than it appears. We thought it should have diamonds or something on it and be much larger! :) It was such a fun experience and so cool to see it though!

During the game, I got asked if I wanted to spin a wheel for a gift certificate to a local restaurant. I said sure, so in the middle of the 6th inning, I went down and spun the wheel in front of the whole crowd.


The wheel landed on the "Volcanoes" logo, so I won a $100 gift certificate! The man said they had been doing this same game for 3 weeks and I was the first one to win!

We had a good time at the game even though it was strange to watch baseball without my pitcher.

What If....

My pitcher and I were talking the other day and he mentioned to me that as a little boy he wanted to go to the University of Texas. This got me thinking about "what if..." When I was younger I wanted to go to the University of Oklahoma and be a cheerleader. Had I gone to OU or had my pitcher gone to Texas, we may not have ever met. I'm so glad we decided on the same college instead. It's interesting to think about how each choice you make has an effect on the rest of your life.

Another example of this that I have thought about is when you drive up to a car accident just moments after it happens. Had you not run back into the house to grab your gym bag or had you not eaten that bowl of cereal before you left, you could have been involved in that accident.

Looking back at choices I have made over time, there are some I am so glad I made. Some of my choices have led to great things and others have even kept me out of danger. Back in high school my parents took me to the Rose Bowl one year over New Years to see WSU and OU (SOOO fun!!). This was a great decision because not only did we get to go to the Rose Bowl, but back home, my friends got in a rollover car accident in a soft-top Jeep. Luckily, all of them had a seatbelt on, so everyone was okay. Had I not gone to the Rose Bowl, I probably would have been in the car and someone wouldn't have had a seatbelt on.

I am so glad I joined my sorority in college. I made some of my best friends in college through my involvement in the sorority. After I graduated, I am grateful for the city I chose to move to and the jobs I chose to apply for. I am so happy where I am and love doing what I'm doing. I am also glad I chose to attend the women's retreat at church a few months ago. Not only was I able to grow spiritually, I made some new friends which led to my involvement in an amazing small group.

Although one should not stress and worry over decisions*, it's interesting to think about the "what if..." and good to think about the consequences for our actions.

Fourth of July: Movies, Sun, BBQs & Rodeos!

It was so hard to get up at 5am this morning to get ready for work. I did not want to work after the beautiful long weekend here in the Pacific Northwest. It was a weekend filled with rare warm temperatures and sunshine! 

My weekend was busy and included a ton of fun things! It started with one of my sorority sisters pulling me out of the house late on Friday night for an 11pm showing of Transformers. I admit, although I was very skeptical, I kind of liked the movie. I went for an 8 mile run jog/walk with my best friend on Sunday after church. I then went to a BBQ on Sunday night and participated in all sorts of random shenanigans. On Monday, I relaxed in the sun for hours and ate some delicious food with Mrs. Bee.

I think the most interesting event I attended this weekend though was definitely a Rodeo in Southern Washington. This was my first encounter as an adult with a Rodeo. We witnessed events such as bareback riding, bull riding, barrel racing, team roping, kids sheep riding, as well as Mrs. Bee's absolute FAVORITE event: calf roping. We even got some delicious food and desserts and a shot of Pendleton Whiskey! Below are some pictures from our adventure.

The calf roping was really not her favorite part. She was traumatized and absolutely freaking out the whole time this event was going on. We had to get up and go take a shot of whiskey just to calm her down. You kind of had to laugh a little though. We were all dressed the part with cowboy boots and hats, but we were taking pictures of EVERYTHING, squealing and being ridiculous. The lady next to us (who had become our friend) even joked that we needed to get a life.

The cutest part was the small children riding the sheep. Each child would ride the sheep and then after they fell off, they would be interviewed by the announcer. They were saying some of the most adorable things!

Philosophy of Charles Schultz

I was cleaning my desk at work today and I found this thing hanging on my wall that I completely forgot was even there. My boss gave these to my department a couple of years ago and it's been hanging on my wall ever since. I reread it again today and thought it had an interesting message that I wanted to share. 

The following was the philosophy of Charles Schultz, the creator of the "Peanuts" comic strip.

Read the following questions. You don't actually need to answer, just ponder them.

The point is that none of us remember the headliners of yesterday and those are not second-rate achievers; they are the best in their fields. When the applause dies, the awards tarnish, the achievements are forgotten and the accolades and certificates are buried with their owners, then who is it that influences us the most?

The First Official Day of Summer

Is anyone else super excited that tomorrow is the first official day of summer? I am so excited! I do love summer and I love that July is my birthday month (yes, I get a whole month to celebrate and Mrs. Bee, you get the whole month to celebrate with me). But really, the first day of summer to me means one step closer to the end of summer which means almost the end of baseball season and then my pitcher coming home for the off-season!

Now, looking forward to the end of summer does seem a little sad because that also means one step closer to a year older as well as to rain and yucky weather again. I would much rather have rain and yucky weather all the time and get to spend every day with my pitcher than to have nice weather and only get to see my pitcher once every two months though. Wouldn't it be nice to have great weather all the time AND see my pitcher every day? Maybe I should reconsider this relocating thing as there are states that are sunny and warm most of the year and he usually ends up playing in them...darn bills and responsibilities always holding me back. ;)

I hope you all enjoy the first official day of summer and the longest day of the year. Take a little time to appreciate the day tomorrow and do something fun!

Homemade Coasters


One fun part about getting to travel to visit my pitcher is that I get to meet new people. I love meeting new people, but I am always nervous to meet the other players wives and girlfriends. The women I have met in the past few years though are so sweet and so much fun! I've made some great friends.

I got the idea for these coasters from one of the awesome women I met. They were very inexpensive to make and turned out so cute! All you need is scrap-booking paper, tiles from Home Depot, felt, Mod Podge, and some super glue. Put them together, add a bow and you have an inexpensive and fun gift!

The first set I made for my pitcher's sister. I thought I would try something different on hers and cover the top, sides and bottom with the paper in order to completely hide the tiles. I would not recommend this. It was A LOT of extra work and you can't really tell the difference.


The second set I decided to make for myself with my favorite color, pink! Looking at them, I think my momma was right when she said they kind of look like the inside of a watermelon. Haha.


When my mom and I went to Joann's to buy felt, we found the best thing ever for these - glitter felt! We didn't even know there was such a thing as glitter felt. This matched the glitter scrap-booking paper very well!

Best Sugar Cookies Ever!

I absolutely love these sugar cookies! They are so delicious! I only bake these cookies for special occasions though because I can barely stop myself from eating them. I baked these this weekend for the special occasion that my pitcher's little sister graduated from college and got engaged! I'm so excited for her! Please note the fabulous shapes of the cookies I made her. Yes, that is a squirrel, a cowboy boot, some stars, a porcupine, and a high-five! :)


Ingredients
3 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
3/4 cup butter at room temperature
1 1/4 cups sugar
1 egg well beaten
1 tsp. lemon or vanilla extract (I always use vanilla)
1/2 cup sour cream


Cream butter in mixer. Add sugar, egg, and extract.


Mix in sour cream.


Combine baking soda and salt with flour. Slowly add to creamed mixture.


Chill dough for at least 2 hours. Once chilled, roll dough out on a well floured board or surface. I just cover the counter with wax paper, add flour, and roll the dough out on the counter.


Cut cookies with floured cutters. Bake at 400 degrees about 6-10 minutes (depending on thickness). Let cookies cool completely on a wire rack before icing. Believe me, I have been in a hurry and added the icing too quickly...it can get ugly! :)


Icing
Warm 1/2 cup butter to room temperature. Cream butter in mixer and gradually add 4 cups of sifted powdered sugar. Add 1 tablespoon milk. If necessary, add more milk one table spoon at a time until the frosting is creamy and spreadable, but not runny. Add food coloring if desired. I also add 1 teaspoon of meringue powder. This will allow the icing to harden slightly which makes it easier to wrap the cookies up as gifts.

During Christmas time, I like to cut the cookies in different size stars and stack them to make Christmas trees. The little Christmas trees make super cute and tasty gifts. I couldn't find a picture of any of my Christmas trees that I made, but this is an example of what the trees look like (mine don't quite look like this somehow though):


I love to find reasons to make these fabulous cookies. I purchased a tub of 100 cookie cutters from Bed Bath & Beyond (for $9.99 after coupons), so I can make cookies in all shapes and sizes for any occasion!

Couponing!

I'm sure you have seen the famous, highly paid baseball players like Derek Jeter and A-Rod and thought to yourself that all baseball players must have it that good, right? Haha. I'll let you in on a little secret...let's just say that most Minor League Baseball players are not playing for the money. :)

Despite the lack of money, I still need to be able to afford to go visit my pitcher. Traveling the United States to visit him can become very expensive. So since our finances can be a little tight, I have found a fun hobby to save money. I have started couponing. I don't know if you have seen the show "Extreme Couponing," but this is what started it all for me. These people are amazing! If you have not seen it, I would suggest checking it out! It airs Wednesday nights at 9pm on TLC! I do not coupon to the extreme that these individuals do because I have found that true extreme couponing takes A LOT of time and would pretty much be a full time job. BTW, if any of you figure out how I can make this a full time job while still being able to pay my bills and go visit my pitcher, please let me know! ;)

Today I stopped by Target to purchase band-aids. Unfortunately, the other couponers beat me to Target and the store was all out of the children's band-aids I was planning on purchasing for $0.13 per box. Luckily, I was carrying all of my coupons on me (as I always do). So instead, by searching in the clearance section for other items that I had coupons for, I was able to purchase a large bottle of Olay body wash, an Olay body bar, 2 large tubes of Crest toothpaste, and a travel size tube of Crest toothpaste for only $2.66. My total savings today was 76%.


I have 4 coupon organizers that I always take into stores with me because you never know when you will need your coupons. In fact, the last time I traveled to visit my pitcher, I took all 4 of the coupon organizers across the country with me. My coupons are organized by like items with grocery coupons taking up 2 of the organizers, sundries taking up 1 of the organizers and the last organizer is miscellaneous coupons. The miscellaneous coupon organizer is my favorite because it's pink and my momma bought it for me! The other 3 I purchased from one of my favorite stores, the Dollar Tree. :)

I have found that by clipping coupons, searching in the clearance items, and using websites to match sales to coupons, I can save quite a bit of money on most anything I want!

It takes some time to search for coupons and cut them all out, but it is definitely worth it! I think I am going to invest in a paper cutter though. My favorite places to find coupons are:
I will warn you that most of the coupon printing websites will require you to download a coupon printer, so they can track which coupons and the amount of each coupon you have printed. 

Couponer's websites can also be very helpful for matching coupons to sales and finding the best deals. I greatly appreciate that they do the hard work for me! A few of my favorite websites are:
Couponing has become kind of an addiction for me! I have only been couponing for about 2 months, but I have found that I become a little sad when I can't use a coupon to purchase something and have to pay *gasp* full retail price. :) Now that I have realized how much money you can actually save by couponing, I'm not sure I will ever be able to do without!

As I have said, in being a baseball "wife" I am away from my pitcher much of the year. This leaves more time for me to spend really thinking. I don't know about you, but the longer I allow my mind to wander, the more random my thoughts become. I often find myself contemplating strange things, so I have decided that I will give you an insight into my thoughts today.

So do you ever have those conversations with people about life and the meaning of it and what the heck we are all doing? I had one of those conversations this week. It really got me thinking. It's strange to ponder the fact that we are just a tiny dot on this earth and an even more minuscule dot in the whole universe. 

As a small child, most of us think the whole world revolves around us and rarely think of other people around the world. But as we grow older, we gain a larger sense of the world and realize that there are billions of people and very few really know anything about us. 

I was thinking about my life and how lucky and fortunate I really am. I feel very blessed to have a loving family, a wonderful boyfriend, and a fantastic group of friends, just to name a few things. When I feel like something "terrible" and "earth-shattering" has happened to me, I always try to stop and take a step back to really get a good look at my situation. Those things that seem so awful to me, are often not really that bad. There are people in the world struggling with much larger issues than mine. Instead of worrying about my small problems, I should be praying for and trying to help those whose situations really are terrible and earth-shattering.

I really enjoy quotes. One of the wonderful women I work with (let's call her Chipmunk as this is her nickname she recently requested) has a dry erase board hanging up at her desk. Every few weeks, I find a new funny, inspirational, random...or just plain stupid quote to write on Chipmunk's board. It keeps us entertained. So since I love quotes, I would like to share a few of my favorites with you:
  1. "So do not worry about tomorrow; for tomorrow will care for itself. Each day has enough trouble of its own." Matthew 6:34 (I also like the surrounding verses: Matthew 6:25-34)
  2. "Life's too short to wake up with regrets. Love the people who treat you right and love the one's who don't just because you can. Believe everything happens for a reason. If you get a second chance, grab it with both hands. If it changes your life, let it. Kiss slowly, forgive quickly, laugh uncontrollably. Never regret anything that made you smile. And God never said life would be easy, he just promised it would be worth it." (I think technically this is more than one quote, but it's a good smorgasbord* of thoughts).
  3. And the quote that can currently be found on Chipmunk's dry erase board: "Work like you don't need the money, dance like no one is watching, love like you've never been hurt, and sing like no one is listening."
I hear the weather here in the Pacific Northwest is SUPPOSED to be beautiful this weekend, although, I have learned that you should rarely trust weathermen. 

I hope the weather is wonderful wherever you may be this weekend and that you can get out and ENJOY IT!

*PS: I thought I should offer you the definition to the word "smorgasbord" as I enjoy this word greatly and just looked it up on Wikipedia to determine the spelling. Smorgasbord: "In English this refers loosely to any buffet with a variety of dishes. In an extended sense, the word is used to refer to any situation which invites patrons to select whatever they wish among lots of pleasant things." (Thank you again Wikipedia). :)

Peanut Butter Chocolate Chip Heath Bar Cookies


As I said before, I love to bake. I went to visit my parents over the long weekend and at about 10pm on Sunday night, my mom and I decided to bake something. We tried to gather the ingredients for multiple desserts, but we were missing too many things and it was too late to go to the grocery store. We finally found a bag of Heath Bar Toffee Bits in the pantry, so we decided to build a cookie recipe around these. We ended up with Peanut Butter Chocolate Chip Heath Bar Cookies and they were delicious! I think I ate about half the batch myself. It's a good thing my mom made me take both a weightlifting and spin class this morning to work off those extra calories! :) 

Ingredients
1/2 cup butter, softened
1/2 cup peanut butter (crunchy or creamy)
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/2 teaspoon vanilla
1 1/4 cups flour
3/4 cup Heath Bar Toffee Bits
3/4 cup chocolate chips


Beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add the sugar and brown sugar. Beat until combined, scraping sides of bowl. 


Add the egg and vanilla and beat until combined.


Slowly beat in the baking soda, salt, and flour.


Add the toffee bits and the chocolate chips and mix briefly. (My mother and I could not find any chocolate chips, so we used a chocolate bar that we broke into small pieces).


If necessary, cover and chill the dough until easy to handle. 

Preheat the oven to 375 degrees. 

Shape dough into 1-inch balls. My mother had a 1-inch baller scoop that worked perfectly, but this level of accuracy is not necessary. :) Place balls 2 inches apart on an ungreased cookie sheet.


Either flatten cookies by making crisscross marks with the tines of a fork or press flat and add peanut halves in a decorative pattern.


Bake for 7 to 10 minutes or until bottoms are light brown. Transfer to wire rack and let cool.
